So I had some old apples… don’t blame me, sometimes against the best efforts they will not get eaten. These were about 2-3 weeks old so quite sweet and started to get wrinkly. I just had to do something with them but I wanted something new, not apple crumble all the time. Also hoped they would be a little more tempting for the kids who don’t like apple crumble. (Weird, I know.) I already made upside down tarts with them. So I came up with these simple cinnamon and apple parcels because all I needed is a box of ready-to-roll puff pastry. This is such an easy and simple recipe, the kids could easily help.

Tools You Need to Make Cinnamon and Apple Parcels
Firstly, you’ll need something to core the apple slices with. Now, this can be a professional tool or even a sharp knife – in which case, you’ll need to supervise the children! – to cut the middle of the apple slice out. I used a cocktail measuring cup. It doesn’t matter though, because even if it’s imperfect, that will be covered by the puff pastry.
Secondly, either a pasta cutter, pizza cutter or a sharp knife again to make the puff pastry stripes neat. I used a ravioli cutter wheel.

Tips When Making Cinnamon and Apple Parcels
- Instead of egg wash, you can just use oat milk and then this becomes a totally vegan recipe as most puff pastries are vegan
- Choose older apples, just because they are sweeter and softer and work better taste and texture-wise with puff pastry
- You can add some caramel or chocolate sauce if you don’t find them sweet enough. Caramel sauce is especially nice
- If you have cinnamon-sugar mixture left over – use it by making cinnamon sugar pecans, or other nuts!
Here’s the method of making them with step-by-step photos:
1. Choose the apples
2. Slice them up and remove the cores
3. Dip them into the sugar and spice mix

4. Cut the puff pastry stripes

5. Loop the puff pastry around the apple rings

6. Give the parcels an oat milk wash

7. Bake for 25 min


Cinnamon Apple Parcels
Ingredients
- 1 pack ready-rolled puff pastry
- 3 large apples choose sweeter, old apples
- 4 tbsp muscovado sugar
- 1 tsp cinnamon
- 1/2 tsp all spice
Instructions
- Wash the apples and slice them into identical, about 1-2cm thick slices. Remove the core with a small, round cutter - I used a cocktail measure cup, because I didn't have a professional tool for this. Even if you just cut around the core with a sharp knife will work because the puff pastry will cover the imperfections.

- Mix the muscovado sugar with the cinnamon and all spice. Dip both sides of the apple rings into the sugary mixture, coat them well.

- Roll out the ready-to-roll puff pastry. Cut it into 2cm wide pieces along the shorter side.

- Roll the pastry pieces around the apple ring, so it covers it entirely.

- Instead of egg wash, you can use oat milk and sprinkle the remaining sugar over the parcels evenly.

- Bake them for 25 minutes on 180C and let them cool before enjoying them. You can eat them as they are or add caramel or chocolate sauce on the top.
