Another “veganised” recipe – the famous Buffalo Wings, but without the wings of the chicken!
I can’t even tell you how pleased I am with this recipe. Just another example of how tasty vegan food can be AND without adding any fake meat. Simply the spices and the vegetable. It makes a proper dinner party or buffet table dish, trust me, even carnivores will love it. This is probably because of the lovely mixture of warm spices and the hot buffalo sauce.
Buffalo Cauliflower Bites in Air Fryer
I have the recipe below written up to bake in the oven – however, it’s also a perfect recipe for air fryers.
Here’s how to make it in the air fryer:

Preheat the air fryer to 200C/400F

Mix the ingredients, add the cauliflower and stir to coat

Arrange in a single layer in the air fryer basket. Work in batches, rather then pushing the florets too close to each other

Air fry for 9 minutes. Flip them over carefully, and air fry for another 5 to 10 minutes, or until the cauliflower is dark and crisp around the edges.

Buffalo Cauliflower Bites Deep Fried
Of course it is also possible to deep fry them in sunflower and vegetable oil, like you could do with breaded chicken wings and other things. Just make sure the frying oil is piping hot when you fry the buffalo Cauliflower Bites, the oil covers them entirely and that you fry them for about 5-6 minutes. Work in batches.
It’s not a big deal to prepare this either, ready under an hour. It can be reheated too, but will not be as nice as freshly made.

Tip: don’t toss the leaves of the cauliflower away!
In proper zero waste style, save the cauliflower leaves and simple roast them for 10-15 minutes (until the edges of the leaves are getting golden brown and crispy) and serve them with the rest of the meal. They are really tasty roasted (pretty much like kale) and go well with the vegan Ranch Sauce as well.
Also, by using a reusable silicone baking liner, you can skip greasing the bottom of the baking sheet.

Vegan Buffalo Cauliflower
Equipment
- 1 food blender
Ingredients
For the Buffalo Cauliflower Bites
- 1 medium head cauliflower broken into florets
- 150 g plain flour
- 300 ml oat milk or other plant based milk
- 100 g breadcrumbs
- 120 g margarine or plant based butter
- 3 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp ground sweet paprika
- 1/2 tsp salt
- 200 g buffalo hot sauce
- 2 tbsp olive oil optional to reusable baking sheet
- pepper to taste
For the vegan Ranch Sauce
- 150 g cashews
- 150 g oat milk or other plant based milk
- 1 generous squeeze of fresh lemon juice
- 2 tsp garlic powder
- salt and pepper to taste
Instructions
- Preheat oven to 180 Celsius.In a mixing bowl, mix the flour, the garlic powder, cumin, paprika and salt.

- Add the milk and whisk until the batter is blended. Dip the cauliflower florets in the batter, followed by the bread crumbs. Spread them out on an baking sheet (covered by reusable baking liner or oil the surface )Bake them for 25 minutes.

- In the meantime, prepare the Buffalo Sauce: melt the butter and mix in the hot buffalo sauce.After 25 minutes baking, spoon them over the cauliflower bites.Then back they go for another 10 minutes of baking, until they are tender.

- During the last 10 minutes of baking, you can make the Ranch Sauce.Put the cashews, spices and lemon juice and the oat milk in the food processor and blitz until it's smooth.Chop up some celery and serve everything together whilst it's hot. Garnish with some fresh cilantro.Enjoy!

- Tip: save the cauliflower leaves, roast them for 15 minutes (same time as the cauliflower bites) and don't waste them. They are delicious, like roasted kale and go well perfectly with the Ranch Sauce!
