For the Buffalo Cauliflower Bites
- 1 medium head cauliflower broken into florets
- 150 g plain flour
- 300 ml oat milk or other plant based milk
- 100 g breadcrumbs
- 120 g margarine or plant based butter
- 3 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp ground sweet paprika
- 1/2 tsp salt
- 200 g buffalo hot sauce
- 2 tbsp olive oil optional to reusable baking sheet
- pepper to taste
For the vegan Ranch Sauce
- 150 g cashews
- 150 g oat milk or other plant based milk
- 1 generous squeeze of fresh lemon juice
- 2 tsp garlic powder
- salt and pepper to taste
Preheat oven to 180 Celsius. In a mixing bowl, mix the flour, the garlic powder, cumin, paprika and salt. Add the milk and whisk until the batter is blended. Dip the cauliflower florets in the batter, followed by the bread crumbs. Spread them out on an baking sheet (covered by reusable baking liner or oil the surface )Bake them for 25 minutes. In the meantime, prepare the Buffalo Sauce: melt the butter and mix in the hot buffalo sauce. After 25 minutes baking, spoon them over the cauliflower bites. Then back they go for another 10 minutes of baking, until they are tender. During the last 10 minutes of baking, you can make the Ranch Sauce.Put the cashews, spices and lemon juice and the oat milk in the food processor and blitz until it's smooth.Chop up some celery and serve everything together whilst it's hot. Garnish with some fresh cilantro.Enjoy! Tip: save the cauliflower leaves, roast them for 15 minutes (same time as the cauliflower bites) and don't waste them. They are delicious, like roasted kale and go well perfectly with the Ranch Sauce!
