I always love fried rice, it’s such a quick, light dinner, a veggie staple meal in our house (wondering now why I never posted about it??). The best thing about fried rice that it can be prepared in so many ways and styles: you can make it into a Chinese fakeaway, spice it up with Japanese flavours (which is what I like the most) or turn it into a fusion dish: like adding pineapple pieces to it, so it’s almost Caribbean. It’s generally an accidentally vegan recipe we are looking at fried rice, but may people add egg to it so it’s vegetarian. Whichever way – it’s delicious. And in this Pineapple Fried Rice – I added some tinned pineapple to jazz things up and I will not look back.
What Vegetables Are Good in Fried Rice?
Options can include peas, carrots, red onion and bell peppers, which add colors and flavors as well. They are the standard ones people like to use. Green onions provide a nice crunch, while broccoli or spinach can offer nutritional benefits. For a bit of heat, consider adding chopped chili peppers. Courgette and mushrooms can also be nice. In my view, sweetcorn, baby sweetcorn especially are also lovely and any crunchy, leafy vegetables like pak-choi.
Tips When Making Pineapple Fried Rice
- When you are preparing this dish, you can add different vegetables or more vegetables even. I used carrots, peas and Edamame beans, but mushrooms are also a great addition and so are red onions, broccoli and bell peppers.
- The only thing is, that the need to be chopped into fairly small pieces.
- I add the pineapples both when cooking (in fact, I let the fruit caramelise with the onions, at the beginning of the cooking process) and topping the ready dish with them, when serving.
- I think canned pineapples are better, but I will try this dish with fresh pineapples too.
- You can use a huge variety of spices and flavourings: fresh ginger, sriracha, fish sauce, oyster sauce and sriracha too.
- You can also use any type of rice: I enjoy fried rice made with brown rice too.
How to Make Pineapple Fried Rice:

Pineapple Fried Rice (vegan recipe)
Ingredients
- 2 tablespoons vegan butter
- 2 medium carrots diced to small pieces
- 150 g frozen or fresh peas
- 150 g frozen edamame beans
- 300 g cooke rice I used sushi rice
- 1 medium yellow onion chopped
- 4 garlic cloves minced
- 3 spring onions sliced
- 3-4 tbsp dark soy sauce
- 1/.2 tbsp dark brown sugar
- 2 tbsp rice vinegar
- 50 g tinned pinapple or fresh plus more for topping
- 1/2 tbsp sesame oil optional
Instructions
- Chop up the carrots, the onions and cook the rice ahead of preparing the meal.

- Heat a wok pan withe the butter and add the onions, the sugar and half of the pineapple to caramelise together. This should be a few minutes.

- Add the veggies and let them simmer until they are al dente. Should be around 10 -15 minutes.

- Add the cooked rice as the final step. Fry for another 5 minutes, add the remaining pineapple and combine everything fully.

- Serve immediately and add a couple of extra pieces of pineapples as topping. Enjoy!
