We’ve been meaning to make cake pops for ages! My little (not so little anymore) girl loves them and we buy them in our favourite patisserie – but we thought we can surely make them as well. Of course we can! So I bought moulds, paper sticks and a holder as part of her Christmas gifts. And a weekend ago it was really cold, we didn’t really want to venture outside, so I thought it’s vegan cake pop making time! Making vegan cake pops is not at all difficult as I found. Even the children can help!
What to buy in preparation
Technically, you will probably need the paper sticks obviously and something to help the sticks with the cake pops on to stand up – like this clever holder I got for them – see the photos.
What you definitely don’t need is silicone molds for the pops. We did buy them and they are absolutely useless. They don’t hold the balls together properly and what we got was just too small anyway. No need for any mold, you can easily from the pops with your hands.
It’s good to have a food processor, as you want smooth cake pops – we did try to make cake pops without breaking the basic vanilla cake into small pieces with our hands, but it’s hard work and you just can’t crumble them into small enough pieces (technically crumbs) with your hands. Having said this, the not perfectly smooth on the inside cake pops taste the same and it’s not visible from the outside either – so you can definitely attempt it without having a food processor.
Tips for making vegan cake pops
Of course, it is entirely possible just to buy any vegan (or vegetarian) cake in the supermarket and use that. This saves the baking time all together. So if you are short on time, you can of course just buy any cake and skip the baking part.
You can prepare the cake balls a day ahead (when you are preparing for children’s birthday party for example) and just leave them in the fridge for overnight. Two hours chilling, however would be the minimum – pretty much like cookie dough. They really need the fridge time for firming.
You can use any decoration, sugar paste with food colouring instead of chocolate. Also, you can add nuts, chocolate chunks or dried fruit in the middle of your cake balls.

Vegan Cake Pops
Equipment
- Food processor
Ingredients
For the basic vegan vanilla cake
- 250 g all purpose flour
- 200 g granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 0.5 tsp salt
- 200 g vegan butter softened
- 60 ml oat milk
- 1 tsp vanilla extract
For binding
- 100 g vegan butter softened
- 200 g powdered sugar sifted
- 1 tsp oat milk
For the chocolate coating
- 300 g vegan milk choc chips
- 2 tsp coconut oil melted (or sunflower oil is good too)
- sprinkles
Instructions
- Preheat the oven to 170CCombine ingredients for the vegan vanilla cake:Cream the butter and the sugar together with a whisk, then add the rest of the ingredients. Bake the cake for about 40 minutes. When it's out of the oven, let it cool.Whilst the vegan vanilla cake is cooling, you can prepare the binding. You will just need to mix the ingredients in a small bowl. When the cake is cool enough, break it into pieces and add them to the food processor to chop them up into smooth crumbs. Then you mix the crumbs with the binding sugar paste and with your hands, make golf ball sized balls. You should get at least 20-24 out of the mixture. Place them into the fridge for 2 hours, so they hold better.

- Towards the end of the end of the 2-hour chilling time, you can prepare the chocolate dip: simply melt the chocolate chips (I boil water in the kettle and fill a cereal bowl half way having a smaller bowl with the chocolate chips sitting in the middle of it. The hot water will melt the chocolate.) and mix in the coconut oil/sunflower oil to thin it.Now it's time for the cake balls to come out from the fridge. Pick up the paper stick and dip the end of it into the chocolate. Use this end to pierce trough the cake ball half way. Now that your cake pop is on the paper stick, you can dip it into the chocolate sauce and sprinkles if you use any. You might need a spoon to make sore the dip is evenly covering your cake pop - just to smooth it all around.Place them onto the cake pop holder or clean plate and let the chocolate solidify. That's it! Enjoy!
