This vegan recipe came to me as I was trying to use up a few apples and plums sitting in the fruit bowl – and no one eating them. Like it used to happen at ours quite often back when the kids were little. The apples were a little sour, they were not the sweetest at all but in this recipe it worked out well as the little sourness of the apples went hand in hand with the sugar and the maple syrup. My only regret is, that I couldn’t take decent enough photos for this recipe, it was too dark and the bright kitchen light just ruined the photos. You still get the idea from them, I hope.
Vegan apple and plum crumble
Of course as with most crumbles apples and plums are the best (I do like a cherry crumble too, though), but you can throw in other fresh, native fruit with hard skin too, like pears. Or the mixture of them, depending on what you have at home. (Mangoes or pineapples won’t work in a crumble I guess, but if you think they do, let me know in the comments!)
I used oats instead of plain flour, a little more nutritious and crunchier too. I try to do this every now and then, cookies are also great with oats and home made cereal snack bars. I used traditional Scottish oats, but any will do, porridge oats as well. Just make sure they aren’t sweetened, just the regular, plain oat flakes.
As it’s a vegan recipe, there is no dairy butter added, but the maple syrup doubles up as binding agent as well. I added 100g margarine because it helps the oats to soften up. If you don’t have maple syrup, you can use golden syrup too. I would not advise using honey, however, not only because it’s not vegan, but it will just harden into sugar chunks if you use it like this. So all in all, there’s not much needed for this recipe, quite simple, yet delicious and warm, perfect autumn and winter treat. (And helps using up going too old fruit!)

Vegan Apple And Plum Crumble
Ingredients
- 5-6 plums stone removed and chopped
- 6-7 small apples cored and chopped
- 100 g vegan butter or margarine melted in the microwave
- 50 g brown sugar
- 1/2 tsp salt
- 130 g oats
- 4 tsp maple syrup
Instructions
- Wash and chop the fruits.Preheat oven to 180 Celsius.

- Mix the pieces of fruits with the sugar. You can add a splash of orange or lemon juice too, but that's optional.

- Mix the oats with the maple syrup and melted margarine.

- Grease the bottom of a roasting dish with a little olive oil and evenly spread the fruit mixture. Then, evenly spread the oat mixture on the top.Place it in the oven and bake it for 35 minutes or until the fruit is soft and the oats turned golden.

- Serve it immediately, add some ice cream on the side if you wish.
