Servings: 12 cheese puffs
- 150 g self-raising flour
- 125 ml milk or oat milk
- 1 egg
- 2 tsp baking powder
- 200 g grated cheddar
- 1/4 tsp salt
Preheat oven to 180 Celsius.In one mixing bowl, whisk the milk and the egg together until they are smooth. I just used skimmed milk - it's totally ok, you don't need full fat milk for this.In another mixing bowl, mix all the dry ingredient until they are well combined. Next step is adding the dry ingredients bowl into the wet ingredients bowl and gently combine. You should see the bicarbonate of soda and self-raising flour immediately reacting and producing foam like pockets. Grease or line a baking sheet and plop a tablespoonful of batter as portion. Repeat and space them out by a few centimetres - like I did on the photo. Bake them for 10 minutes, they will start to puff up immediately in the oven and cook very quickly, so you just want to reach a light golden colour - and then they are done.Eat them warm or cold next day (just cover them so they don't go stodgy).
