Magnolia Flower Syrup
A beautiful, fragrant and ginger-like syrup that's great as a cordial or use it in glaze for dessets.

- 50 g magnolia petals
- 300 g caster sugar
- 300 ml water
Separate the petals from the core and discard all the ovaries and everything else - we just need the petals.
Add the water to a large pan and bring it to boil. Turn it down to low temperature and add the sugar when it's just simmering. Add the sugar and stirring it let it dissolve.Add the magnolia petals. Let the petals simmer on very low temperature for about 20 minutes, almost as if you just want to infuse the syrup. Stir it occasionally.
Strain the syrup with a sieve, straight into a sterilised bottle. Let it cool.
