I’m sure you’ve already heard about the godly combination or watermelon and feta cheese – match made in heaven! This has been my favourite salad in the past few weeks, it’s so yummy and bursting with flavours that it does make a perfect, standalone, light meal. Like lunch – especially in the hot weather. Gives lots of energy and trust me – I’m normally hungry all the time – it is quite fulfilling. It’s super healthy and nourishing as well: the spinach being packed with Vitamin K, A and C, folate, as well as known for its anti-inflammatory and antioxidant abilities. The combination of the watermelon, creamy and tangy feta cheese and the fresh veggies and herbs results in a total flavour burst – this has to be one of my favourite summer salad recipes. You can sprinkle it with toasted pine nuts and other salad seeds like poppy, linseed and sunflower seeds for some extra crunchiness. You can also use vegan cubes, that are similar to feta cheese – there are plenty of vegan options out there. The first time I made this salad I actually served it as a starter – but it was just so yummy that I ended up having nothing else but this salad for that meal.
Plus, it’s such an easy task to make it: just chop up the watermelon and the feta cheese and toss with the spinach leaves. Toasting the pine nuts are also a five minute job and can be done whilst assembling the base of the salad.
The only tip I would suggest when making this, is that the watermelon really need to be in top form. Sweet, crunchy and very fresh. You could technically store this in the fridge for another 12 hours if you must, but it won’t be as good as the freshly prepared salad.

Spinach, Watermelon and Feta Cheese Salad
Ingredients
- 150 gram fresh baby spinach washed
- 300 gram cubed watermelon about 1/3 of a small watermelon
- 4-5 pieces radish thinly sliced
- handful cherry tomatoes halved
- 200 gram feta cheese crumbled
- handful pine nuts toasted
- handful gourmet salad seeds optional
- 2 tsp virgin olive oil
- handful fresh basil leaves
Instructions
- Place the ingredients in a large bowl: spinach, watermelon, radish, cherry tomatoes, basil. Toss with olive oil. Combine well.Toast the pine nuts in a small frying pan. Crumble the feta cheese on the top of the salad, sprinkle with pine nuts and salad seeds. (Poppy seeds, linseeds, sunflower seeds, sesame seeds.)Serve it immediately.

Would never have thought to add watermelon to a salad but it looks so refreshing, especially in this heat

Yes, I think you can swap it for vegan feta I think, it’s the same salty cheesy taste.
