- 300b vegan chocolate I used 1/3 vegan milk and 2/3 vegan dark chocolate
- 100 ml vegan single cream soy cream or similar
- 75g g ground almond
- 100 g dried pistachio nuts can be roasted
- handful dried cranberries
- 100 g dried cashews can be roasted
- 200 g biscotti or amaretti/rich tea/ginger snaps
- 30 g desiccated coconut
Melt the chocolate (break it into segments beforehand) in a heatproof bowl suspended over a saucepan of simmering water. Add the vegan single cream and mix well until fully combined and melted. Switch the heat off, leave it as it is until you do the next steps so the chocolate ganache stays warm and melted.
Next step is to bash the biscotti with a rolling pin until you have crumble.
Take the bowl of chocolate ganache off the hob and fold in all the ingredients.
Tip the mixture into a clean, long plastic bag. Using your hands, mould the mixture into a fat salami-like log through the plastic bag. Make it approximately 30cm/12in long. Shift it into the middle of the bag, leaving about an inch or two of both sides that you can pinch together as if you were fastening the beg. Twist the ends by still grasping both ends of the plastic bag and rolling the sausage-log towards you several times.
Place the wrapped salami into the fridge and let it set. Ideally a few hours.
When it's chill and firm, you can remove it from the bag, roll it into desiccated coconut and add marzipan stars or other things to decorate it.Slice it to serve or alternatively cube it. It will last in the fridge for a week or so.
