Simple and easy recipes are the best! I love plain biscuits, like shortbread or linzer. Sometimes I use vegan recipes, sometimes I use the regular ones. But they have to be simple and easy, as I am chronically time poor, like many other parents trying to juggle it all. So, cookies and biscuits fit the bill, plus the children can help to – they have been always helping, even when they were little. It’s a great way to introduce the little ones to the kitchen and baking and in my view it’s also important to learn as much as possible from early on: how is food being made, help with gardening, producing food and all that you would call nowadays “foodtech” in school.

Swapping butter for vegan alternative
Indeed. However, most of them needs butter – a lot of butter in fact. Since we are trying to eat more vegan if possible – I made these cookies vegan with vegan butter/maragarine (However you want to call it).
So easy, the children can help too
They are so simple to prepare that even children can make them from scratch. It’s a very useful recipe: only 3 ingredients needed for the biscuits, easy to remember and the 3 ingredients are always in the pantry. Simple, home baked vegan biscuits, something you can always remember and bake then you’re craving a sweet treat.

My children have really enjoyed making these too, cutting the shapes and adding the chocolate chips. (Mostly eating them, haha!)
You can even decorate them
Because of the short baking time they won’t melt, so you can even use themas decoration, like we did. I can’t say, that they stay fresh for weeks, because we ate them all in a matter of a day – which is why we need to make less next time – but I reckon for a few days they would survive in a biscuit tin. You can also add icing to these as they are strong enough to cope with the icing. A Robot Coupe can help you to whip it up.

3 Ingredient Vegan Biscuits
Ingredients
- 200 g vegan margarine room temperature
- 100 g soft brown sugar/golden caster sugar or white caster sugar for blonde biscuits
- 300 g plain flour
- chocolate chips for decorating optional
Instructions
- Preheat oven to 175 Celsius.Combine everything in a mixing bowl and form a dough.

- Cut the biscuits with cutters - use some flour to dust the surface you're rolling the dough out - it's a bit sticky!

- You can add some chocolate chips if you'd like!

- Bake them for 10-12 minutes - they burn easily if they are thin. I like them that way, a little more crispiness! Keep them in a biscuit tin.

Thank you for a simple recipe that tastes great. I used gluten free flour and a teaspoon of xantan gum. It made 30 Easter shape biscuits.

Great recipe thank you. My 4 Yr old and 2 Yr old enjoy making them with me. Last ti. E we decorated with choc chips like you, that was tasty, this time we added a teaspoon of ground ginger powder – yum! And we have some lemon icing ready to pop on the the top (literally just some icing sugar and juice from a lemon, mix it up and voila!)

Love these have made them loads now. They hold an embossed pattern really well for anyone wondering.
They were good – however, the dough refused to roll or be cut out (not sure if it’s me or the recipe here!) so instead I rolled them into balls and flattened them slightly which worked quite well but needed 22 minutes instead of 12. PS adding a little lavender water makes great results! Just follow the recipe, with no choc chips, and when you’re done add some lavender water. To make lavender water simply get some lavender stalks, dry them in a 100C (fan 80C) oven for 10 – 15 minutes, and when they are completely dry pull the small section of the flower off and but them in a cup of water. Wait for the taste to infuse (it should turn peppermint – tea green) remove the flower parts and voila, lavender water.
I have not tried them yet but would Vegan Royal Icing work to decorate them?
I guess if you roll it out the right size and nice and thin it could work?
These sound delicious! I’m not vegan but am trying to reduce my dairy intake. I’ll be giving these a whirl very soon.
I made these biscuits and they were lovely. I didn’t add chocolate chips though but added lemon zest and vanilla essence. They were liked by the people who tried them. I’m making them again tonight. With dairy free chocolate chips as gifts for birthdays.
